Easy Potato Soup

I love potato soup and so does my family.  They love for me to make a pot of hot potato soup on a cold day.  My mom made potato soup when I was a child and I always loved it too.

Potato Soup Recipe

6 large potatoes ( I add more to fill my pan, depending on the number of servings I want)

Diced Onion, according to taste

3 Tablespoons Margarine

3 Tablespoons All Purpose Flour

3 1/2 Cups Milk

1  Cup Chicken Broth

1 tsp Salt

1/2 tsp Pepper

Crumbled Bacon

Shredded Cheese (I like Cheddar Jack or Monterey Jack)

Peel the potatoes and cut them up into small pieces.  Rinse the potatoes and then add water to cook them.  Add the onion.  I usually make sure the water covers the potatoes.  Cook until they are tender. About 20 minutes or so.

While the potatoes are cooking melt butter in a large saucepan.  Blend in flour, salt and pepper.

Add Milk and Chicken Broth all at once.  Cook, stirring constantly, till mixture thickens and bubbles.  Remove sauce from heat.

After the potatoes are cooked, drain them and then put them back into the pan.  Add the milk mixture to the potatoes and simmer for about 10 minutes.  Add more salt and pepper to taste.

Put soup in the bowls and top with cheese and bacon.
